Blueberry Recovery Muffins

Made with Amino VITAL Rapid Recovery, these skinny muffins are a nice way to enjoy a warm snack while still getting your amino acids.

Some ingredients, such as milk, flour, sugar or oil could be substituted with healthier options of your choice.

Ingredients:

– 1½  cups of all-purpose flour or flour of choice

– 2 tsp baking powder

– 1-2 packets of Amino VITAL Rapid Recovery

– 1 egg

–  ½  cup of sugar

–  ½  cup of Unsweetened Almond Milk or milk of choice

–  ¼ cup of canola oil or oil of choice

– ¼ cup plain fat-free Greek yogurt

– 1 teaspoon vanilla extract

– 1½  cups of frozen blueberries

Instructions:

1) Preheat oven to 425°F. Grease the muffin pan or add liners.

2) In a large mixing bowl, add the flour, baking powder, and Amino VITAL Rapid Recovery and whisk together then set aside.

3) In a separate mixing bowl, add the egg, sugar, milk, canola oil, Greek yogurt, vanilla, and whisk together until smooth.

4) Add the wet ingredients to the dry ingredients, stirring until smooth. Do not over-mix or muffins will be tough.

5) Fold in blueberries.

6) Fill muffin tin with mixture.

7) Bake for 5 minutes at 425°F.

8) Lower the temp to 375°F and bake for about 19 to 20 minutes or until tops are set. Check frequently.

9) Allow muffins to cool for 5-10 minutes in pan before removing.

 

These muffins keep for about a week in a sealed container at room temperature.
